Happy Pancake day/Shrove Tuesday depending on your background.

The following pancake mix is a lovely alternative to the traditional flour and egg pancakes.

You will need:

  • 2 tbsp Flaxseed
  • 5 tbsp water
  • 2 tbsp cacao powder
  • 3 bananas
  • 1tsp cinnamon
  • 1 tsp coconut oil


  1. Add flaxseeds and water together and mix before placing in the fridge for 15 minutes (this is the ‘egg’ or the bit that binds it together).
  2. Mix bananas cacao powder, cinnamon and coconut oil together in a bowl.
  3. After combining both 1 & 2 you have enough for 6 pancakes (3 servings).
  4. Place both mixtures on a hot pan and make your pancakes.

Note, I have found cooking slowly helps and keeping the mixture quite thin. It has also taken me about 4 efforts to get this down – regardless of how they look, they taste great!
