Happy Pancake day/Shrove Tuesday depending on your background.
The following pancake mix is a lovely alternative to the traditional flour and egg pancakes.
You will need:
- 2 tbsp Flaxseed
- 5 tbsp water
- 2 tbsp cacao powder
- 3 bananas
- 1tsp cinnamon
- 1 tsp coconut oil
- Add flaxseeds and water together and mix before placing in the fridge for 15 minutes (this is the ‘egg’ or the bit that binds it together).
- Mix bananas cacao powder, cinnamon and coconut oil together in a bowl.
- After combining both 1 & 2 you have enough for 6 pancakes (3 servings).
- Place both mixtures on a hot pan and make your pancakes.
Note, I have found cooking slowly helps and keeping the mixture quite thin. It has also taken me about 4 efforts to get this down – regardless of how they look, they taste great!
